Flax Sandwich Bread:
Turn oven onto 170 degrees
Melt 75g coconut oil
Add into a food processor:
120g almond flour
300g ground flaxseed
6 eggs
2 tsp bicarbonate of soda
2 tsp salt
3 tsp fennel seeds (optional)
juice of 1/2 lemon
Mix it all together
Add the oil whilst mixing
Add 100ml water and keep blending
Let it sit for a few mins to thicken up and then blend again. Add more water if needed.
Then turn it out into a greased 2lb loaf tin and bake for 45 mins
Keep in fridge.
