• 300g Almonds (ideally activated)
  • 450g Desiccated Coconut for mixture
  • 100g Desiccated Coconut for decoration
  • 75g Cacao powder
  • 25g Sweet Spice Mix Powder – to give them that mince pie flavour
  • 375g Dates (de-stoned)
  • 300ml Melted Coconut Oil
  • Zest of 2 un-waxed oranges
  • Method:

    • Add the nuts, desiccated coconut, cacao and Sweet Spice Mix to the food processor and blend until no large chunks of nuts remain.
    • With the food processor lid on, add the de-stoned dates (one at a time) through the hole in the lid, while the food processor is still on. Allowing the food processor to break down each date before you add the next.
    • Add the orange zest to the food processor and mix it through.
    • Lastly, pour in the melted coconut oil through the hole in the lid and blend until all mixed in
    • Transfer the mixture into a bowl and allow to cool for a while (use the fridge if room temperature is high)
    • Once the mixture has cooled and it starts to bind together when rolled in the hands it is ready to roll into balls.
    • Weigh out 40g of the mixture and place it into the palm of clean hands (wearing rubber gloves makes it easier to roll the balls and less messy), this will give you an idea of how much mixture to pick up each time you roll out a ball.
    • Roll into a ball, then roll the ball across a plate of dessicated coconut to decorate.
    • Place rolled, decorated balls on to a tray and put in the fridge to set.

    At ~40g per ball, this quantity of ingredients should make 35-40 balls. Each ball is then approx 240 cals and 18% carbs.]]>
